Under the Bed Cookies

I spent my teens on in the suburbs of Chicago, and have special memories of baking for the Holidays with my German born mom.  She had her special recipes, and we had great neighbors in our new house in Hanover Park.  Our neighbor across the street became a special friend to mom, and they had fun sharing Christmas cookie recipes.  This one is aptly named, as she couldn’t keep the kids away from them, so she hid them in a box under her bed until Christmas Eve.  Obviously she didn’t own a curious dog!  I’ve had this handwritten recipe with me for over 50 years, this is the first year I’ve actually baked the cookies, and they are wonderful, similar to a thumbprint cookie, loaded with butter and therefore they melt in your mouth.

  • 1 lb butter
  • 1 cup sugar
  • 4 egg yolks
  • 4 cups all purpose flour
  • fruit preserves, jelly or conserve for filling (I used American Spoon Triple Berry Conserve)

  1. Mix butter and sugar together until creamy.
  2. Add the egg yolks, mix well.
  3. Add flour, once cup at a time, mixing well. You will then have a nice pliable dough.
  4. Roll dough into balls about the size of a silver dollar.  Place balls on a cookie sheet, and press thumb or finer into each ball to create a depression.
  5. Fill the depressions with the filling of choice.
  6. Bake 12 minutes at 375 degrees.  Let cool on cooling racks for a few minutes if possible.
  7. Enjoy!  Taste often!

This recipe makes a LOT of cookies, I have spare dough in a freezer bag in the frig and will be baking more, trying different preserves and fruit fillings. My favorite fillings are the American Spoon preserves and conserves.
