Savory Farmhouse Tomato Pudding

  • Author: Liz
  • Total Time: 50 minutes
  • Yield: 4 - 8 servings 1x

This savory side dish has a touch of sweetness to it, thanks to the American Spoon Farmhouse Tomato Relish.  Southerners love to serve Tomato Pudding as part of their Thanksgiving dinner spread.  It’s delicious with meatloaf too!  I used Delallo canned tomatoes but you can use whatever canned diced or pureed tomatoes you prefer – do use a high quality product though, it will make a difference!  The Delallo tomatoes were whole, so I squeezed them to a pulpy texture

  • 128 oz can Tomatoes, whole, diced or pureed
  • 2 to 4 Tbl American Spoon Farmhouse Tomato Relish (depending on your desired level of sweetness)
  • 4 slices thinly sliced French or Italian bread, torn into smallish pieces
  • 2 Tbl Butter (salted is ok)
  • 1 tsp Salt
  • 1 tsp Pepper

  1. Preheat the oven to 350 degrees.
  2. Pour tomatoes into a 1 1/2 quart baking dish.  If using whole tomatoes, squeeze them to a pulpy texture.
  3. Add the torn bread pieces, salt and pepper and mix in.
  4. Dot the top of the mixture with the butter.
  5. Bake for 40 minutes.
  6. Enjoy!

This is sooo simple and yet so good!  Try it with your favorite meatloaf dish!
