Lemon Honey Cheesecake Bites

Description

So easy to prepare with just three ingredients, yet good enough for company!  I am loving dessert boards, and these little gems work perfectly for that purpose.  Although I did these for Valentines Day, they can be used any day of the year or for any occasion.  Keep tartlet shells on hand in your pantry anytime you need an emergency dessert.


Ingredients

Scale
  • 4 oz cream cheese
  • 2 to 3 TBL lemon honey, preferably American Spoon brand
  • 12 graham cracker tartlet shells, such as Yumallo
  • 12 fresh raspberries

Instructions

  1. Place the cream cheese in a microwave safe small bowl.  Heat for 30 to 45 seconds until completely softened.
  2. Add the lemon honey to the softened cream cheese and mix well, making sure the honey is completely incorporated.
  3. Spoon the cream cheese mixture into the tartlet shells.  Let sit in the refrigerator for about 15 minutes, then place a fresh raspberry on each tartlet shell.
  4. Enjoy!

Notes

The tartlet shells are available at most WalMart stores, in the bakery section.  Sometimes you have to look up on the top shelves though.  I’ve provided a link below to tartlet shells that are available on Amazon (easy peasy):
