Tomato and Cucumber Pickle Relish Salad


Cool and refreshing, so easy to make, it makes me start thinking of warmer weather around the corner!  The secret ingredient in this recipe is American Spoon’s Cucumber Pickle Relish.  There is no substitute for this special stuff.


  • 1 cucumber, peeled and sliced (you may want to quarter the slices depending on the size)
  • 1 ripe hothouse or beefsteak tomato (may sub two roma tomatoes), chopped
  • 2 TBL American Spoon Cucumber Pickle Relish
  • 1/2 tsp Sale
  • 1/2 tsp Pepper


  1. Place the prepared cucumbers on a paper towel and allow some of the moisture from the cucumbers to drain off.
  2. Place the prepared cucumbers, tomato, and relish in a bowl and mix well.
  3. Add the salt and pepper and stir together once more.
  4. Refrigerate for about an hour.  Enjoy!


I didn’t seed the cucumber or tomato, but please feel free to do so if you are serving to folks who have trouble with seeds.  It will still be delicious!
