Citrus Passionfruit Mini Cheesecakes (No Bake!)


Amercan Spoon’s curds are the BEST EVER.  I’ve always loved their Lemon Curd, and recently opened a jar of their Citrus Passionfruit curd.  Heaven in a 9 oz. jar!  So if lemon curd cheesecakes are popular, why not a Citrus Passionfruit curd cheesecake?  Voila!  It’s here!  I did mini cheesecakes, because these are NO BAKE and therefore easier to make and serve.  Ten thumbs up to this one!


  1. One package (six total) mini graham cracker shells (such as Keebler)
  2. 8 oz full fat cream cheese (not low fat or fat free)
  3. 3 TBL confectioners sugar
  4. 3 1/2 TBL Citrus & Passionfruit curd
  5. 1 1/2 tsp orange extract
  6. 1/2 cup half & half
  7. Whipped cream or Cool Whip
  8. Orange or tangerine slices, optional


  1.  Place the cream cheese in a microwave safe pyrex bowl.  Microwave the cream cheese for 15 seconds to soften.
  2. Add the confectioners sugar, curd and orange extract, and whisk briskly until smooth.
  3. Add the heavy cream and continue to whisk until cream is thoroughly combined in the mixture
  4. Spoon the cream cheese mixture into the shells.  Place the cheesecakes in the refrigerator to firm up, a minimum of four hours.
  5. Decorate the cheesecakes with whipped cream or cool whip, a dollop of curd, and a slice of orange or tangerine..


It’s important to use the full fat stuff so that the cheesecakes set and firm up.  The low fat stuff will stay runnier than we’d like.
