Smoky Corn Salsa Chili

Description

This is my best chili recipe creation ever!  I’ve discovered a wonderful small-batch food producer in Northern Michigan by the name of American Spoon.  I tried every salsa they sell and decided that their Smoky Corn Salsa is absolutely the best ingredient for a good, flavor packed chili recipe.  Give this a try!


Ingredients

Scale
  1. 1 lb cubed Chuck roast
  2. 1/2 lb pork sausage (such as Jimmy Dean original)
  3. approx 2 Tbl light olive oil (or oil of your choice)
  4. 1 small onion, chopped
  5. 1/21 tsp minced garlic (the jarred stuff or squeeze tube stuff works great)
  6. 1 Tbl Chili powder
  7. 14.5 oz can diced green chiles
  8. 1/2 jar American Spoon Smoky Corn Salsa
  9. 1 15-oz can stewed tomatoes
  10. 1 15-oz can diced tomatoes
  11. 1 15-oz can beef broth
  12. 1 tsp chicken bouillon
  13. 1 tsp Oregano
  14. 1 tsp Cumin

Instructions

  1. Brown the meats in a skillet.
  2. In a medium/large pot, sweat the chopped onions in the olive oil.  Add the meats to the pot. Stir well.
  3. Add the remaining ingredients, stirring after each addition.
  4. Bring to a boil, then reduce to a simmer and let the wonderful mixture simmer for a minimum of two hours uncovered.  If it appears to be getting dry, add water or bouillon.
  5. After cooking is complete, serve in bowls with your choice of condiments – chopped onions, cheddar cheese, sour cream, cilantro are all good choices.  Enjoy!

Notes

I cannot say enough about how good this chili has turned out.  We had leftovers two days later and it was even better!  Do this! The link to purchase the smoky corn salsa is below:
